This Honey Lavender Lemonade is a sweet, tangy, and floral drink that’s perfect for summer. It’s refreshing, easy to make, and feels like a treat for all your senses.

  • 2 tablespoons dried culinary lavender
  • 1/3 cup honey
  • 1 cup fresh lemon juice (about 46 lemons)
  • 4 cups cold water
  • Ice (for serving)

Instructions

  1. Make the lavender syrup: In a small saucepan, combine 1 cup of water, 2 tablespoons of dried lavender, and 1/3 cup of honey. Bring to a gentle simmer over medium heat, stirring to dissolve the honey. Once it starts simmering, remove from heat and let it steep for about 15 minutes.
  2. Strain the syrup: Use a fine-mesh strainer to remove the lavender buds. Discard the buds and let the syrup cool completely. You can pop it in the fridge to speed things up.
  3. Squeeze the lemons: While the syrup cools, juice your lemons. You’ll need about 1 cup of fresh lemon juice, which is roughly 4-6 lemons, depending on their size.
  4. Mix it all together: In a large pitcher, combine the lavender syrup, fresh lemon juice, and 4 cups of cold water. Stir well to combine. Taste and adjust—if it’s too tart, add more water or a touch more honey.
  5. Serve and enjoy: Fill glasses with ice, pour in the lemonade, and garnish with a sprig of fresh lavender or a slice of lemon. Enjoy immediately!

Notes

For best results, chill the lemonade in the fridge for an hour or two before serving. Adjust the sweetness to your preference by adding more or less honey. The lavender syrup can be made up to a week in advance and stored in the fridge.
