  • 2 ripe peaches, sliced (or 1 cup canned peaches in juice, drained)
  • 23 scoops vanilla ice cream (about 1 cup)
  • 1/4 cup pie crust crumbles (store-bought, homemade, or graham cracker crumbs)
  • 1 cup cream soda (or ginger ale/sparkling water)
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon brown sugar (optional, for tossing peaches)
  • Whipped cream, for topping (optional)

Instructions

  1. Wash and slice the peaches. If desired, toss slices with brown sugar and cinnamon in a small bowl and let sit for 5 minutes.
  2. Crumble pie crust into bite-sized pieces. For extra crunch, toast crumbs in a 350°F oven for 3-5 minutes.
  3. Scoop 2-3 generous scoops of vanilla ice cream into a tall glass.
  4. Layer the cinnamon-sugar peaches over the ice cream.
  5. Sprinkle pie crust crumbles on top of the peaches.
  6. Slowly pour cream soda over the layered ingredients until the glass is nearly full, allowing the soda to mix slightly with the ice cream.
  7. Top with whipped cream and a sprinkle of cinnamon. Garnish with a peach slice or extra pie crust, if desired.
  8. Serve immediately with a straw and long spoon.

Notes

For best results, use ripe peaches and chill all components before assembling. Toasting pie crust adds extra crunch. Dairy-free and gluten-free options are easy: use non-dairy ice cream and gluten-free pie crust. Assemble just before serving for maximum chill and texture. Frozen peaches work well if thawed and patted dry.
