Strawberry Shortcake Iced Latte

This Strawberry Shortcake Iced Latte is a sweet, creamy, and refreshing summer drink that tastes just like dessert in a glass. With layers of homemade strawberry syrup, espresso, milk, whipped cream, and a cookie crumble, it’s the perfect treat for hot days.

Ingredients

  • 1/2 cup chopped fresh strawberries (or thawed frozen strawberries)
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 ounces espresso or 1/3 cup strong brewed coffee (cooled)
  • 3/4 cup milk (whole, oat, almond, or coconut)
  • Whipped cream, for topping
  • Crushed shortbread cookies, vanilla wafers, or biscuit crumble (optional, for topping)
  • Ice

Instructions

  1. In a small saucepan, combine strawberries and sugar. Heat over medium, stirring and mashing until juicy and sugar dissolves (about 4-5 minutes), or blend and strain.
  2. Stir in vanilla extract. Let syrup cool to room temperature.
  3. Brew a double shot of espresso or 1/3 cup strong coffee. Let cool slightly.
  4. Fill a tall glass with ice.
  5. Spoon 2-3 tablespoons of strawberry syrup into the bottom of the glass and swirl.
  6. Pour espresso or coffee over the syrup and ice.
  7. Slowly pour in milk for a layered effect.
  8. Top with whipped cream and sprinkle with crushed cookies if desired.
  9. Insert a straw, stir before drinking, and enjoy!

Notes

Use super ripe strawberries for best flavor. Strain the syrup for a smoother drink. Let coffee cool before pouring over ice to avoid dilution. For dairy-free, use plant-based milk and whipped topping. Strawberry syrup can be made ahead and stored in the fridge for up to 4 days.
