  • 1 lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp sriracha
  • 1 tbsp honey
  • 1 tbsp fresh lime juice
  • Chopped cilantro for garnish

Instructions

  1. In a medium bowl, mix the flour and cornstarch together. Set aside.
  2. Beat the eggs in a separate bowl. Place the panko breadcrumbs in a third bowl.
  3. Pat the shrimp dry with paper towels. Dredge each shrimp in the flour mixture, dip into the beaten eggs, and coat with panko breadcrumbs.
  4. Heat vegetable oil in a large skillet over medium-high heat (about 350ยฐF/175ยฐC). Fry the shrimp in batches for 2-3 minutes per side until golden and crispy. Remove and place on a wire rack to drain.
  5. In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth. Taste and adjust seasoning if needed.
  6. To assemble, drizzle the sauce over the shrimp or toss them gently to coat. Arrange the shrimp in martini glasses and garnish with chopped cilantro.
