Ingredients

Scale
  • 1 ยฝ cups (360 ml) tomato juice
  • ยฝ cup (120 ml) beer cheese dip (preferably sharp cheddar-based and creamy)
  • 2 ounces (60 ml) vodka
  • 4 ounces (120 ml) light lager or pilsner beer
  • 1 teaspoon Worcestershire sauce
  • ยฝ teaspoon hot sauce (e.g., Frankโ€™s RedHot), or more to taste
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon horseradish (optional)
  • ยฝ teaspoon celery salt
  • Pinch of freshly ground black pepper
  • Garnishes: celery stalks, pickle spears, cherry tomatoes, crispy bacon strips (optional)

Instructions

  1. Place ยฝ cup (120 ml) of beer cheese dip into a mixing glass or bowl. If thick, gently warm for 10-15 seconds in the microwave to soften.
  2. Add 1 ยฝ cups (360 ml) of tomato juice to the beer cheese. Blend with an immersion blender or regular blender until smooth and creamy.
  3. Pour in 2 ounces (60 ml) vodka and 4 ounces (120 ml) beer. Stir gently to combine without losing carbonation.
  4. Stir in 1 teaspoon Worcestershire sauce, ยฝ teaspoon hot sauce, 1 tablespoon fresh lemon juice, 1 teaspoon horseradish (optional), ยฝ teaspoon celery salt, and a pinch of black pepper.
  5. Taste and adjust seasoning by adding more hot sauce or lemon juice if desired.
  6. Fill a glass with ice cubes and pour the cocktail over. Garnish with celery stalk, pickle spear, or crispy bacon strip.

Notes

If beer cheese dip is too thick, add a splash of beer or tomato juice to loosen. Use a light lager or pilsner beer to avoid overpowering flavors. Blend thoroughly to avoid clumps. Adjust hot sauce and lemon juice to taste. For dairy-free, substitute beer cheese with vegan cheese dip or creamy cashew spread and use vegan Worcestershire sauce.
