A light, sweet, and refreshing cocktail combining fresh peach puree with crisp Prosecco, perfect for brunch or any celebratory occasion.

  • 2 ripe peaches, peeled and pitted
  • 1 bottle (750 ml) dry or extra dry Prosecco
  • 1 tablespoon freshly squeezed lemon juice
  • 1 to 2 teaspoons granulated sugar or simple syrup
  • Ice cubes (optional)

Instructions

  1. Prepare the peaches by peeling and pitting 2 ripe peaches. To peel easily, blanch in boiling water for 30 seconds then plunge into ice water. Cut into chunks.
  2. Make the peach puree by blending peach chunks with 1 tablespoon lemon juice and 1 to 2 teaspoons sugar or simple syrup until smooth. Optionally strain through a fine mesh sieve for a pulp-free texture. Chill puree for 10 minutes if desired.
  3. Chill your glasses and Prosecco in the fridge to keep the cocktail cold and bubbly.
  4. Pour about 3 ounces (90 ml) of peach puree into each chilled champagne flute. Slowly top with 4 to 5 ounces (120-150 ml) of Prosecco, pouring gently to preserve bubbles. Stir lightly.
  5. Garnish with a thin slice of fresh peach or a sprig of mint. Serve immediately.

Notes

Use ripe peaches for best flavor. Chill glasses and Prosecco to keep bubbles lively. Pour Prosecco slowly at an angle to preserve fizz. Peach puree can be made ahead and refrigerated up to 2 days. Avoid over-pureeing peaches to prevent bitterness.
