This homemade pumpkin spice syrup uses real pumpkin puree and warm spices to create a rich, aromatic syrup that transforms your morning coffee into a cozy fall ritual. Quick and easy to make, it’s perfect for lattes, iced coffee, or drizzling over pancakes.

  • 1 cup granulated sugar (200 g)
  • 1/2 cup pumpkin puree (120 g)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground allspice
  • 2 tablespoons maple syrup (optional)
  • Pinch of salt (optional)

Instructions

  1. In a medium saucepan, combine 1 cup water and 1 cup granulated sugar. Whisk over medium heat until sugar is completely dissolved, about 2-3 minutes.
  2. Whisk in 1/2 cup pumpkin puree, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground cloves, and 1/8 teaspoon ground allspice until fully incorporated.
  3. Bring mixture to a gentle simmer (small bubbles around edges). Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  4. Remove from heat and let steep for 10 minutes to extract maximum flavor.
  5. Place a fine-mesh strainer over a heat-safe glass jar or bowl. Pour syrup through strainer, pressing on solids with the back of a spoon. Discard pulp and spice residue.
  6. Let syrup cool completely at room temperature. It will thicken slightly. Seal jar and refrigerate for up to 2 weeks.

Notes

For a deeper flavor, toast whole spices (cinnamon stick, cloves, nutmeg pieces) in a dry pan for 1-2 minutes before adding liquid. Use a vanilla bean instead of extract for more complexity. The syrup tastes even better after a day or two in the fridge. If too thin, simmer 5 more minutes; if too thick, whisk in warm water 1 tablespoon at a time.
