  • 1/2 cup water
  • 1 tablespoon lemon juice
  • Chilled champagne or prosecco

  • Ice cubes (optional, for chilling)

Instructions

  1. Combine 1 cup of fresh blackberries, 1/2 cup of granulated sugar, and 1/2 cup of water in a small saucepan. Heat over medium heat, stirring until the sugar dissolves. Let the mixture simmer for 8-10 minutes, gently mashing the blackberries with a spoon.
  2. Once the syrup has thickened, remove it from heat. Pour the mixture through a fine-mesh strainer into a bowl or jar, pressing the solids to extract as much liquid as possible. Stir in 1 tablespoon of lemon juice and let it cool completely.
  3. Chill your champagne flutes in the freezer for 10 minutes to keep the drink extra crisp. Add a few fresh blackberries and a sprig of mint to each glass for garnish.
  4. Add 1-2 tablespoons of the cooled blackberry syrup to each flute. Slowly pour in chilled champagne, tilting the glass slightly to preserve the bubbles.
  5. Stir gently with a cocktail spoon, ensuring the syrup mixes well with the champagne. Serve immediately and enjoy!
