Blueberry Coconut Lime Slushie

A frosty, tropical summer drink featuring tart blueberries, creamy coconut milk, and zesty lime juice. This easy slushie is refreshing, dairy-free, and perfect for hot days or parties.

Ingredients

  • 2 cups frozen blueberries
  • 1 cup full-fat canned coconut milk
  • Juice of 2 limes (about 1/4 cup)
  • 23 tablespoons honey or agave syrup (adjust to taste)
  • 1 cup ice cubes
  • Optional: shredded coconut, mint leaves, extra lime wedges for garnish

Instructions

  1. Measure out all ingredients: frozen blueberries, coconut milk, lime juice, sweetener, and ice cubes.
  2. Add blueberries, coconut milk, lime juice, sweetener, and ice to a blender.
  3. Blend on low speed, then increase to high. Blend for 30-60 seconds until smooth and frosty.
  4. Taste and adjust: add more honey/agave for sweetness, more lime for tartness, or more coconut milk/water if too thick.
  5. Pour into glasses and garnish with shredded coconut, mint leaves, or lime wedges as desired.
  6. Serve immediately while icy and thick.

Notes

For extra creaminess, freeze coconut milk in ice cube trays and use those instead of regular ice. Chill serving glasses in the freezer for a few minutes before pouring to keep the slushie frosty longer. Adjust sweetness and tartness to taste. Can be made ahead and frozen for up to 2 days; re-blend before serving. Add lime zest for extra zing or mix in other berries for variety.
