A refreshing summer drink combining tart lemons, sweet berries, and honey for a vibrant and crowd-pleasing beverage.

Ingredients

Scale
  • 45 large fresh lemons (about 1 cup of juice)
  • 1 cup (150 g) mixed berries (strawberries, raspberries, blueberries)
  • 1/4 cup (60 ml) honey (or substitute with maple syrup or sugar)
  • 4 cups (1 liter) cold water
  • 1/2 cup (120 ml) water for berry puree
  • Ice cubes
  • Mint leaves (optional)

Instructions

  1. Roll the lemons on the countertop to release their juices, then slice them in half. Juice them using a juicer or by hand to yield about 1 cup (240 ml) of fresh lemon juice.
  2. Add 1 cup (150 g) of mixed berries to a blender or food processor along with 1/2 cup (120 ml) of water. Blend until smooth.
  3. Using a fine mesh strainer, strain the berry puree into a bowl or pitcher to remove seeds and pulp.
  4. In the pitcher, combine the lemon juice, berry puree, and honey. Start with 1/4 cup (60 ml) of honey, taste, and adjust as needed. Stir well until the honey dissolves.
  5. Pour in 4 cups (1 liter) of cold water and stir to combine. Adjust water quantity for desired flavor strength.
  6. Add plenty of ice to the pitcher and refrigerate for at least 30 minutes to allow the flavors to meld together.
  7. Serve the blush berry lemonade in glasses filled with ice. Garnish with fresh mint leaves and extra berries.
