A fruity, refreshing sweet tea with a perfect balance of sweetness and tartness, ideal for summer gatherings or quiet afternoons.

  • 4 black tea bags
  • 2 cups (300g) mixed berries (raspberries, blueberries, blackberries)
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) water
  • Juice of 1 lemon (about 23 tablespoons)
  • Ice cubes
  • Fresh mint (optional)

Instructions

  1. Boil 4 cups (950ml) of water and steep 4 black tea bags for about 5 minutes. Remove the tea bags and allow the tea to cool slightly.
  2. In a medium saucepan, combine 2 cups (300g) of mixed berries, 1 cup (200g) of sugar, and 1/2 cup (120ml) of water. Heat over medium and simmer for about 10 minutes, stirring occasionally, until the berries break down and the mixture thickens.
  3. Using a fine mesh strainer, strain the berry mixture into a bowl or directly into your pitcher. Discard the pulp.
  4. Add the cooled tea to the berry syrup and stir well. Squeeze in the juice of one lemon (about 2-3 tablespoons) to brighten the flavors.
  5. Fill your pitcher with ice cubes, pour in the tea mixture, and give it a final stir. Serve in glasses over more ice cubes and garnish with fresh mint or extra berries.

Notes

Taste as you go to adjust sweetness. Use frozen berries if fresh ones are unavailable. Refrigerate for up to 24 hours before serving.
