A fun and refreshing summer cocktail made by melting classic red, white, and blue Bomb Pop popsicles into vodka with fresh lemon juice and sparkling water for a chilled, boozy treat.

Ingredients

Scale
  • 1 Bomb Pop popsicle (red, white, and blue)
  • 2 ounces vodka (Titoโ€™s Handmade Vodka recommended)
  • ยฝ ounce fresh lemon juice
  • ยฝ ounce simple syrup (optional)
  • 2 ounces sparkling water or club soda
  • Ice cubes
  • Fresh mint or lemon slices (optional, for garnish)

Instructions

  1. Chill the serving glasses in the freezer for 10 minutes.
  2. In a mixing glass, combine 2 ounces vodka, ยฝ ounce fresh lemon juice, and ยฝ ounce simple syrup if desired. Stir or shake gently for about 15 seconds.
  3. Remove one Bomb Pop popsicle from the freezer and let it soften slightly so it melts well in the cocktail.
  4. Pour the vodka mixture into the chilled glass and add a handful of ice cubes.
  5. Gently place the Bomb Pop popsicle into the glass, allowing it to float and slowly melt.
  6. Top with 2 ounces sparkling water or club soda poured gently over the popsicle.
  7. Garnish with a sprig of fresh mint or a lemon slice on the rim and serve immediately with a straw or cocktail pick.

Notes

Let the popsicle soften slightly before adding to the cocktail to ensure it melts properly and releases flavor. Pour sparkling water gently to keep bubbles lively. Chill glasses beforehand to keep the drink cooler longer. Experiment with different spirits like white rum, gin, or tequila for flavor variations. Do not freeze the full cocktail with the popsicle inside to avoid icy texture.
