Instructions

  1. Make the cinnamon syrup: In a small saucepan, combine 1/4 cup brown sugar, 1/4 cup water, and 2 cinnamon sticks. Bring to a gentle simmer over medium-low heat, stirring until the sugar dissolves (about 2 minutes). Let it bubble for 2-3 minutes, then remove from heat and stir in 1/2 teaspoon vanilla extract. Let the cinnamon sticks steep while you prep the cider (5–30 minutes for deeper flavor), then strain.
  2. Heat the apple cider: In a medium saucepan, pour in 4 cups apple cider. Warm over medium heat until steaming but not boiling (about 3–4 minutes).
  3. Combine & sweeten: Remove the cider from heat. Stir in all of the strained cinnamon syrup and 1/4 cup caramel sauce. Whisk well to blend. Taste and adjust sweetness if desired.
