  • 3 cinnamon sticks
  • 4 whole cloves
  • 1-inch piece fresh ginger, sliced (or 1/2 tsp powdered ginger)
  • Peel from 1 medium orange (zest only, no pith)
  • 2 tbsp brown sugar or maple syrup (optional)
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup (240 ml) sparkling water or club soda (optional)

Instructions

  1. In a medium saucepan, pour in 4 cups (950 ml) of apple cider. Add 3 cinnamon sticks, 4 whole cloves, sliced ginger, and the orange peel zest.
  2. Place the pan over medium heat. Bring the mixture just to a simmerโ€”about 5 minutes. Avoid boiling to preserve fresh flavors.
  3. Reduce heat to low and let the cider simmer gently for 15 minutes, stirring occasionally to infuse the spices.
  4. Stir in 2 tablespoons of brown sugar or maple syrup, 1 tablespoon of fresh lemon juice, and 1 teaspoon of vanilla extract. Taste and adjust sweetness if needed. Simmer another 2-3 minutes.
  5. Using a fine mesh strainer or cheesecloth, strain the hot cider into a heatproof pitcher or directly into mugs for a smooth drink.
  6. For a sparkling twist, top each serving with a splash of chilled sparkling water or club soda and stir gently.
  7. Pour the cozy apple cider mocktail into mugs and garnish with a cinnamon stick or a thin orange slice.

Notes

Avoid boiling the cider to preserve fresh flavors. Use whole spices for best aroma and flavor; ground spices can be used sparingly if needed. Peel orange carefully to avoid bitter pith. Reheat gently on stove, avoid microwaving. Store leftovers refrigerated up to 4 days. Add sparkling water for fizz if desired.
