Instructions

  1. Prep your apples: Wash the apples thoroughly. Cut them into quarters, removing the core and seeds. Leave the skin on. If you have time, slice the quarters into thinner wedges (about 1/2 inch thick) to release more flavor during cooking.
  2. Combine everything in the slow cooker: Place the apple quarters, apple cider, water, cinnamon sticks, whole cloves, star anise (if using), and orange peel strip into your small slow cooker. Give it a gentle stir to distribute the spices. Do not add the maple syrup or honey yet.
  3. Cook on low for 4 to 6 hours: Set your slow cooker to low. At 4 hours, the cider will be lightly flavored; at 6 hours, it will be deeply spiced and rich. Aim for 5 hours for a sweet spot.
  4. Check the flavor at the 4-hour mark: Carefully remove the lid and taste the cider. If you want a stronger cinnamon flavor, add another stick. If it tastes too sweet, add a splash more water or a squeeze of lemon juice.
  5. Strain the cider: Place a fine-mesh strainer over a large measuring cup or bowl. Carefully pour the cider through the strainer to catch the solids. Press gently on the apple pieces with the back of a spoon to extract remaining liquid—do not press too hard or the cider will become cloudy.
  6. Sweeten to taste: Let the strained cider cool for a minute or two, then stir in your maple syrup or honey. Start with 1 tablespoon and taste. Adjust as needed.
  7. Serve immediately: Divide the warm cider between two mugs. Garnish with a fresh cinnamon stick and a thin apple slice if desired.
