  • 1 cup (240 ml) whole milk (or oat milk/almond milk for dairy-free options)
  • 2 tablespoons (30 ml) vanilla syrup (homemade or store-bought)
  • 1 teaspoon granulated sugar (optional, to adjust sweetness if making your own syrup)
  • 1/2 teaspoon pure vanilla extract (if making homemade syrup)
  • 1/4 cup (60 ml) cold water (for diluting syrup if homemade)
  • Pinch of sea salt (optional, for syrup)
  • Pinch of cinnamon or nutmeg (optional, for garnish)

Instructions

  1. Brew 2 shots (60 ml) of blonde espresso using an espresso machine or brew 1/3 cup (80 ml) of strong light roast coffee using a coffee maker, moka pot, or Aeropress. This takes about 3-5 minutes.
  2. If making homemade vanilla syrup: In a small saucepan, combine 1/4 cup (60 ml) cold water, 1/4 cup (50 g) granulated sugar, and 1/2 teaspoon pure vanilla extract. Heat gently over medium heat, stirring until sugar dissolves completely. Let cool to room temperature (about 5-7 minutes). Optionally add a pinch of sea salt.
  3. Pour 1 cup (240 ml) cold whole milk into a milk frother and froth until milk doubles in volume and becomes smooth and velvety (about 30-45 seconds). If using a handheld frother, heat milk gently to around 140ยฐF (60ยฐC) before frothing.
  4. In a latte mug, pour the brewed blonde espresso. Add 2 tablespoons (30 ml) vanilla syrup and stir gently. Adjust sweetness if desired.
  5. Slowly pour the frothed milk over the espresso and syrup mixture, holding back the foam with a spoon. Then spoon the foam on top to create a velvety layer.
  6. Optionally sprinkle a pinch of cinnamon or nutmeg on top for garnish. Serve immediately.

Notes

Do not overheat milk beyond 160ยฐF (71ยฐC) to maintain foam quality; aim for about 140ยฐF (60ยฐC). Fresh milk produces better foam. If foam is thin, chill frother cup before use. Stir syrup into espresso before adding milk for better flavor blending. Homemade vanilla syrup can be stored in the fridge up to two weeks. Serve immediately for best foam texture.
