A simple and satisfying homemade bubble tea recipe featuring chewy tapioca pearls soaked in rich brown sugar syrup, combined with creamy milk and robust black tea.

  • 1/2 cup (100 g) tapioca pearls (small or large)
  • 1 cup (200 g) packed dark brown sugar
  • 1 cup (240 ml) water for syrup
  • Extra water for cooking tapioca pearls
  • 2 black tea bags (or 2 teaspoons loose leaf black tea, Assam or Ceylon)
  • 1 1/2 cups (360 ml) whole milk (or oat, almond, or coconut milk for dairy-free)
  • Ice cubes as needed

Instructions

  1. Bring 4 cups (960 ml) of water to a rolling boil in a medium saucepan. Add the 1/2 cup (100 g) tapioca pearls carefully. Stir gently to prevent sticking. Boil for 20-25 minutes, stirring occasionally to keep pearls separated.
  2. Turn off the heat, cover the pot, and let the pearls sit for another 20 minutes to achieve a chewy texture.
  3. Strain the pearls through a fine mesh strainer and rinse with cold water to stop cooking. Set aside.
  4. In a clean saucepan, combine 1 cup (200 g) brown sugar with 1 cup (240 ml) water. Bring to a simmer over medium heat, stirring frequently. Let it simmer until thick and glossy, about 10-15 minutes. Avoid burning.
  5. Add the drained tapioca pearls to the syrup and stir gently to coat. Let them soak for at least 10 minutes.
  6. Steep 2 black tea bags in 1 1/2 cups (360 ml) of hot water for 5 minutes. Remove tea bags and allow tea to cool to room temperature or chill.
  7. Spoon a generous amount of brown sugar-coated boba into a glass. Add ice cubes if desired. Pour in the cooled tea, then top with milk. Stir gently to combine.
  8. Serve immediately with a wide straw and enjoy.

Notes

Cook tapioca pearls gently and soak them after boiling for best chewy texture. Simmer brown sugar syrup slowly to avoid burning. Soak pearls in syrup to keep them sweet and prevent sticking. Chill tea before mixing to avoid diluting the drink. Store cooked pearls in syrup in the fridge for up to 2 days.
