  • 1 cup (240 ml) milk of choice (whole milk, almond milk, oat milk, or soy milk)
  • ยฝ teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Make the Brown Sugar Syrup: Place 2 tablespoons of packed brown sugar in a small saucepan over medium-low heat. Add 2 tablespoons of water. Stir gently as the sugar dissolves and the mixture begins to bubble. Cook for about 3-4 minutes until it thickens slightly and turns a rich caramel color. Remove from heat and set aside.
  2. Prepare the Matcha: Sift 1 teaspoon of matcha powder into a heatproof bowl or cup to prevent clumps. Pour 2 ounces (60 ml) of hot water (about 175ยฐF/80ยฐC) over the powder. Using a bamboo whisk or small regular whisk, briskly whisk in a zigzag motion until the matcha is fully dissolved and frothy, about 15-20 seconds.
  3. Heat and Froth the Milk: In a separate small saucepan or microwave-safe container, warm 1 cup (240 ml) of your chosen milk until steaming (around 140ยฐF/60ยฐC). If you have a milk frother, froth the milk now until creamy and foamy.
  4. Combine Ingredients: Pour the warm brown sugar syrup into your serving mug. Add the whisked matcha, then gently pour in the warm milk, holding back the foam with a spoon. Stir gently to combine all the layers.
  5. Top and Serve: Spoon the milk foam on top. Add a tiny pinch of salt and ยฝ teaspoon vanilla extract if desired, then give it one last gentle stir. Sip and enjoy!

Do not use boiling water for matcha to avoid bitterness; aim for about 175ยฐF (80ยฐC). Sift matcha powder before whisking to avoid clumps. Caramelize brown sugar slowly on medium-low heat to prevent burning. Milk can be frothed using a frother or by shaking warm milk in a sealed jar. Brown sugar syrup can be made ahead and refrigerated for up to 7 days; warm before use.
