  • 1 shot (30 ml) freshly brewed espresso
  • Egg whites from 2 large eggs, room temperature (pasteurized eggs optional)
  • 2 tablespoons granulated sugar
  • ยฝ teaspoon vanilla extract (optional)
  • Ice cubes as needed

Instructions

  1. Prepare your cold brew and espresso: ensure cold brew is chilled and espresso is freshly brewed and hot (about 30 ml or 1 shot). Set aside.
  2. In a clean, grease-free bowl, add egg whites and start whipping on medium speed with an electric mixer.
  3. When egg whites become frothy, gradually add granulated sugar while continuing to whip.
  4. Whip until stiff, glossy peaks form that hold their shape when the whisk is lifted (3-5 minutes). Fold in vanilla extract gently if using.
  5. Fill a tall glass with ice cubes and pour in 1 cup (240 ml) of cold brew coffee, leaving space at the top.
  6. Slowly pour the hot espresso shot over the cold brew to create a layered effect.
  7. Use a spoon or small ladle to gently scoop the egg white cloud and carefully place it on top of the cold brew and espresso mixture.
  8. Serve immediately and enjoy the visual cascade and creamy, bold flavors. Stir gently if desired.
