  • 1 cup (240 ml) strong brewed coffee, cooled
  • 1/2 cup (120 ml) whole milk, cold
  • 1/4 cup (60 ml) heavy cream, cold
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon, plus more for garnish
  • 1 tablespoon brown sugar (light or dark)
  • Ice cubes (enough to fill your glass)

Instructions

  1. Brew 1 cup (240 ml) of strong coffee and let it cool to room temperature or refrigerate until cold.
  2. In a small bowl, combine 1 tablespoon brown sugar, 1/2 teaspoon ground cinnamon, and 1 teaspoon vanilla extract. Stir into a thick paste.
  3. In a jar or frothing cup, combine 1/2 cup (120 ml) cold whole milk, 1/4 cup (60 ml) cold heavy cream, and the cinnamon dolce paste. Stir gently to break up the paste.
  4. Using a handheld milk frother, froth the milk mixture for 30-45 seconds until thick and doubled in volume. Alternatively, seal the jar and shake vigorously for about 60 seconds.
  5. Fill a tall serving glass with ice cubes.
  6. Pour the cooled coffee over the ice, filling the glass about 3/4 full.
  7. Gently spoon or pour the cold foam over the back of a spoon onto the coffee to create a layer on top.
  8. Sprinkle a pinch of ground cinnamon over the foam. Serve immediately with a straw.

Notes

Use cold milk and cream straight from the fridge for the best foam. Do not over-froth; stop when the foam is thick and creamy. For a dairy-free version, use barista-style oat milk and full-fat coconut cream. The cinnamon dolce paste can be made ahead and stored in the fridge for up to a week.
