A refreshing and easy homemade iced coffee featuring a luscious whipped coconut cream topping blended with bold cold brew coffee, perfect for mornings or brunch.

  • 1.5 cups (360 ml) cold brew coffee, strong and well-chilled
  • ยฝ cup (120 ml) full-fat canned coconut cream, chilled
  • 2 tablespoons (30 ml) maple syrup (or honey/agave nectar as substitute)
  • 1 teaspoon (5 ml) vanilla extract
  • Ice cubes, as needed
  • Optional: pinch of sea salt

Instructions

  1. Chill the canned coconut cream in the fridge overnight or for at least 8 hours. Alternatively, freeze for 20 minutes to speed up.
  2. Scoop ยฝ cup (120 ml) of thickened coconut cream into a chilled mixing bowl. Whip with an electric mixer on medium speed for 2-3 minutes until fluffy and soft peaks form.
  3. Add maple syrup (2 tablespoons) and vanilla extract (1 teaspoon) halfway through whipping. Add a pinch of sea salt if desired.
  4. If making cold brew at home, steep ยฝ cup (45 g) coarsely ground coffee in 2 cups (480 ml) cold water for 12-18 hours, then strain and chill. Otherwise, use store-bought cold brew chilled.
  5. Fill a glass or mason jar with about 1 cup (240 ml) ice cubes. Pour in 1.5 cups (360 ml) cold brew coffee, leaving room for coconut cream.
  6. Spoon whipped coconut cream gently over the cold brew to create a creamy layer. Stir if desired or enjoy layered.
  7. Serve immediately for best texture and flavor.

Notes

Chill both the coconut cream and mixing bowl for best whipping results. Use full-fat canned coconut cream, not coconut milk. Whip just until soft peaks form to avoid grainy texture. Assemble drink just before serving to keep layers distinct. If coconut cream is too thick, fold in a tablespoon of cold brew to loosen.
