A quick and easy homemade frozen treat that transforms the classic creamy mango lassi into refreshing popsicle cups with a subtle hint of cardamom.

  • 2 cups ripe mangoes, peeled and chopped
  • 1 cup full-fat Greek yogurt
  • 2 tablespoons honey (or maple syrup for vegan)
  • 1/4 cup milk (whole or dairy-free)
  • 1/4 teaspoon ground cardamom
  • 1 tablespoon fresh lime juice
  • Pinch of salt
  • Optional: fresh mint leaves

Instructions

  1. Peel and chop about 2 cups of ripe mangoes into cubes. If using frozen mango, let it thaw slightly for easier blending.
  2. In a small bowl, stir together 2 tablespoons honey, 1 tablespoon fresh lime juice, and a pinch of salt.
  3. Add the chopped mangoes, 1 cup Greek yogurt, 1/4 cup milk, 1/4 teaspoon ground cardamom, and the honey-lime mixture to a high-speed blender.
  4. Blend on high until completely smooth and creamy, about 30-45 seconds, scraping down the sides if needed.
  5. Taste and adjust sweetness or thickness by adding more honey or milk as desired.
  6. Spoon the lassi mixture evenly into popsicle cups or molds, filling almost to the top and leaving room for expansion.
  7. Insert wooden sticks or handles into each cup and freeze for at least 4-6 hours or overnight until solid.
  8. To unmold, briefly dip the cups in warm water to loosen the edges and serve immediately.

Notes

Use ripe mangoes for best sweetness and texture. Blend thoroughly to avoid icy texture. Adjust honey to taste based on mango sweetness. For dairy-free, substitute Greek yogurt and milk with coconut yogurt and coconut milk. Avoid freezing longer than 24 hours to maintain creamy texture.
