  • 1 cup fresh pineapple chunks
  • 4 pineapple slices for grilling
  • 1 cup full-fat canned coconut milk
  • 1/2 cup cream of coconut
  • 1/2 cup white rum (optional)
  • 2 tablespoons freshly squeezed lime juice
  • 2 cups ice cubes
  • 1 tablespoon simple syrup
  • 1/2 teaspoon vanilla extract

Instructions

  1. Slice 4 pineapple rounds about 1/2-inch thick. Heat grill or grill pan over medium-high heat until hot.
  2. Grill pineapple slices for 3-4 minutes per side until caramelized and grill marks appear. Remove and let cool slightly, then cut into chunks.
  3. In a blender, combine 1 cup fresh pineapple chunks, grilled pineapple chunks, coconut milk, cream of coconut, lime juice, rum (if using), simple syrup, vanilla extract, and ice cubes.
  4. Blend starting on low speed, then increase to high until smooth and creamy, about 45 seconds to 1 minute.
  5. Taste and adjust sweetness by adding more simple syrup or cream of coconut if desired. If too thick, add a splash of pineapple juice or coconut milk.
  6. Pour into chilled glasses, garnish with grilled pineapple wedge or lime wheel, and serve immediately.

Notes

If blender struggles with frozen pineapple, let chunks soften for 5 minutes or blend in batches. Grilling pineapple adds smoky sweetness essential to flavor. For non-alcoholic version, omit rum and add pineapple juice or sparkling water. Use cream of coconut, not coconut cream, for sweetness. Serve immediately for best texture.
