  • 1 cup heavy cream (240 ml)
  • 1 cup freshly grated Parmesan cheese (about 100 g)

  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1 medium zucchini, sliced into half-moons
  • 1 red bell pepper, cut into strips
  • 1 cup baby carrots, halved lengthwise
  • 1 small red onion, cut into wedges
  • 2 tablespoons olive oil (extra virgin recommended)
  • 1 teaspoon dried thyme or rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the zucchini, bell pepper, baby carrots, and onion with olive oil, thyme, salt, and pepper. Spread them evenly in a large baking dish.
  3. Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, and Italian seasoning. Arrange the chicken over the vegetables in the baking dish.
  4. In a small saucepan over medium heat, melt the butter and add the minced garlic. Cook for about 1 minute until fragrant but not browned.
  5. Pour in the heavy cream and bring to a gentle simmer, stirring occasionally. Remove from heat and whisk in the grated Parmesan cheese until smooth. Let the sauce thicken slightly.
  6. Pour the sauce evenly over the chicken and vegetables, coating everything well.
  7. Bake uncovered for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and caramelized at the edges.
  8. Optional: For a golden top, switch the oven to broil for the last 2-3 minutes, watching carefully to prevent burning.
  9. Remove from oven and let rest for 5 minutes before serving.

Use freshly grated Parmesan for best sauce texture and flavor. Pat chicken dry to avoid watery sauce. Use a meat thermometer to avoid overcooking chicken.
