A comforting and indulgent hot chocolate recipe combining the rich flavors of Guinness stout with creamy hot chocolate, topped with whimsical marshmallow clovers for a festive touch.

Ingredients

Scale
  • 2 cups (480 ml) whole milk (or 2% or oat milk for lighter/dairy-free option)
  • 1 cup (240 ml) Guinness Stout
  • 2 tablespoons unsweetened Dutch-processed cocoa powder
  • 2 ounces (55 g) finely chopped dark chocolate (at least 70% cocoa)
  • 2 tablespoons granulated sugar (brown sugar optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Large white marshmallows (store-bought or homemade) for marshmallow clovers
  • Green food coloring or matcha powder (for coloring marshmallows)
  • Toothpicks or small skewers (for shaping marshmallow clovers)

Instructions

  1. Prepare the marshmallow clovers: Add a drop of green food coloring or a sprinkle of matcha powder to a small bowl. Using toothpicks, gently poke and join three marshmallows together to form a clover shape. Set aside on parchment paper. (About 10 minutes)
  2. Heat the milk and Guinness: Pour 2 cups whole milk and 1 cup Guinness into a medium saucepan. Warm over medium heat, stirring occasionally to prevent skin from forming. Heat until just steaming, not boiling โ€” about 4 to 5 minutes.
  3. Add cocoa powder and sugar: Whisk in 2 tablespoons unsweetened cocoa powder and 2 tablespoons sugar. Keep whisking until fully dissolved and the mixture is smooth and glossy. (2-3 minutes)
  4. Melt the dark chocolate: Add 2 ounces finely chopped dark chocolate to the saucepan. Stir constantly until completely melted and incorporated. The hot liquid should be velvety and rich. (2 minutes)
  5. Flavor with vanilla and salt: Remove from heat and whisk in 1 teaspoon vanilla extract and a pinch of salt. Taste and adjust sweetness if needed.
  6. Serve: Pour the creamy Guinness hot chocolate into mugs. Gently place the marshmallow clovers on top โ€” theyโ€™ll slowly melt and infuse the drink with subtle sweetness and a festive touch. Serve immediately.

Notes

Warm milk gently to avoid scorching or curdling. Whisk steadily to avoid lumps and achieve a glossy finish. Avoid boiling the mixture once Guinness is added to prevent curdling. Prepare marshmallow clovers just before serving for best texture. For dairy-free version, use plant-based milk and dairy-free chocolate and marshmallows.
