  • 1 cup (240ml) full-fat coconut milk
  • 1 to 2 tablespoons honey or maple syrup (use agave syrup for vegan option)
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon vanilla extract
  • 1 cup (about 8 cubes) ice cubes (optional)
  • Pinch of sea salt
  • Optional: 1 to 2 ounces (30-60 ml) rum
  • Optional: shredded coconut flakes for garnish
  • Optional: fresh mint leaves for garnish

Instructions

  1. Prep your pineapple: If using fresh pineapple, peel, core, and cut into chunks (about 1 cup / 150g). If frozen, measure out the chunks and let them sit for 5 minutes to soften slightly.
  2. Add pineapple chunks, 1 cup (240ml) full-fat coconut milk, 1 to 2 tablespoons honey or maple syrup, 1 tablespoon fresh lime juice, 1/2 teaspoon vanilla extract, and a pinch of sea salt to the blender.
  3. Add about 1 cup (8 cubes) of ice for a chilled, slushy texture, or skip if you prefer a smoothie-like drink.
  4. Blend on low speed gradually increasing to high for 1 to 2 minutes until smooth and creamy. Stop and scrape down the sides if needed.
  5. Taste and adjust sweetness or thickness by adding more honey/maple syrup or coconut milk/water as desired, then blend again.
  6. Serve immediately in chilled glasses, garnished with shredded coconut flakes or fresh mint if desired.
  7. Optional: Add 1 to 2 ounces (30-60 ml) rum before blending for a boozy version.

Notes

Use full-fat canned coconut milk for best creamy texture. Frozen pineapple chills the drink without watering it down. Adjust sweetness last as pineapple ripeness varies. For a boozy version, add rum before blending. Blend thoroughly for smoothness. Store leftovers in fridge up to 24 hours and stir before serving.
