  • 1/2 cup (120 ml) heavy cream (or coconut cream for dairy-free)
  • 1/4 cup (60 ml) milk (whole milk preferred, or almond/soy milk for dairy-free)
  • 2 tablespoons pumpkin puree (pure pumpkin, not pumpkin pie filling)
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons maple syrup or honey (adjust sweetness to taste)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • A pinch of salt

Instructions

  1. Prepare the Cold Brew: If you donโ€™t have pre-made cold brew, steep 1 cup (85g) of coarsely ground coffee in 4 cups (950 ml) of cold water for 12 to 24 hours in the fridge. Strain through a fine mesh or coffee filter. Use 1 cup (240 ml) of this concentrate for the recipe.
  2. Make the Pumpkin Cream Topping: In a mixing bowl, combine 1/2 cup (120 ml) heavy cream, 1/4 cup (60 ml) milk, 2 tablespoons pumpkin puree, 1 teaspoon vanilla extract, 1 to 2 tablespoons maple syrup, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and a pinch of salt.
  3. Whip the Mixture: Using a blender or hand mixer, whip on medium-high speed until the cream thickens slightly and becomes frothy but still pourable โ€” about 1 to 2 minutes. If the mixture gets too thick, add a splash of milk to loosen.
  4. Assemble the Drink: Fill a tall glass with ice cubes, then pour 1 cup (240 ml) cold brew coffee over the ice. Slowly spoon or pour the pumpkin cream topping over the cold brew to create a layered effect.
  5. Serve and Enjoy: Stir gently before sipping to mix the creamy pumpkin layer with the cold brew beneath. Sip slowly and savor the smooth flavors.

Notes

Use cold heavy cream and milk straight from the fridge for best whipping results. Adjust sweetness with maple syrup or honey to taste. The pumpkin cream topping is best fresh but can be stored in the fridge for up to 2 days; whisk before using again. Pour pumpkin cream gently over the back of a spoon to keep layers distinct. If the pumpkin cream gets too thick, add a splash of milk to loosen it.
