A smooth, nutty, and perfectly sweetened iced pistachio latte that tastes just like Starbucks, made easily at home with simple ingredients.

  • 1/2 cup unsalted shelled pistachios (preferably raw)
  • 2 tablespoons simple syrup or honey
  • 23 tablespoons water
  • A pinch of salt
  • 12 shots freshly brewed espresso (23 oz / 6090 ml) or 1/2 cup (120 ml) strong brewed coffee
  • 1 cup (240 ml) milk of choice (whole, almond, oat, or coconut milk)
  • 1 cup ice cubes
  • Optional: whipped cream or crushed pistachios for garnish

Instructions

  1. Place 1/2 cup of unsalted pistachios into a blender or food processor and pulse a few times to break them down.
  2. Add 2 tablespoons of simple syrup (or honey) and 2 tablespoons of water to the pistachios. Blend continuously for 1-2 minutes until smooth and creamy without large bits.
  3. Add a pinch of salt and blend again for 10 seconds. Set the pistachio paste aside.
  4. Prepare 1-2 shots of espresso (2-3 oz / 60-90 ml) or 1/2 cup (120 ml) strong brewed coffee.
  5. In a tall glass, combine the pistachio paste with the warm espresso. Stir well until fully dissolved and uniform.
  6. Pour 1 cup (240 ml) of your preferred milk into the glass and stir gently to combine.
  7. Fill the glass with about 1 cup of ice cubes to chill the latte.
  8. Optional: Top with whipped cream or sprinkle crushed pistachios for garnish.

Notes

If the pistachio paste is too thick, add an extra tablespoon of water and blend again. Slightly warm the espresso before mixing for better dissolution. Use whole milk for creaminess or oat/almond milk for dairy-free options. Store leftover pistachio paste in an airtight container in the fridge for up to one week.
