A refreshing and creamy iced latte featuring floral lavender-infused honey and smooth oat milk, perfect for warm days and a delightful afternoon pick-me-up.

Ingredients

Scale
  • 2 shots (60 ml) espresso or ยฝ cup (120 ml) strong brewed coffee
  • 1 cup (240 ml) unsweetened barista-style oat milk
  • 2 tablespoons (30 ml) raw or local honey
  • 1 teaspoon (about 1 gram) dried culinary lavender buds
  • Ice cubes as needed
  • ยฝ teaspoon (2.5 ml) vanilla extract (optional)

Instructions

  1. In a small saucepan over low heat, combine 2 tablespoons honey with 1 teaspoon dried culinary lavender buds. Warm gently for about 5 minutes, stirring occasionally, without boiling.
  2. Strain the warm honey through a fine mesh strainer to remove lavender buds, creating a lavender honey syrup.
  3. Prepare 2 shots (60 ml) of espresso or ยฝ cup (120 ml) strong brewed coffee.
  4. In a separate glass or jar, stir together 1 cup oat milk and the infused lavender honey syrup. Add ยฝ teaspoon vanilla extract if using and mix well.
  5. Fill a tall glass with ice cubes. Pour the espresso over the ice, then gently add the lavender honey oat milk mixture on top to create a layering effect.
  6. Optionally, use a handheld frother to create a light froth on top or stir gently before drinking.
  7. Enjoy immediately, savoring the floral, sweet, and creamy flavors.

Notes

Do not overheat the honey to preserve delicate floral notes. Use barista-style oat milk for best creaminess. Substitute maple syrup for honey to make vegan. Chilling the glass beforehand keeps the drink cooler longer. The lavender honey syrup can be stored at room temperature for up to two weeks. Avoid too much lavender to prevent a soapy taste.
