  • 1 teaspoon pure vanilla extract
  • 2 large egg whites (room temperature)
  • 1/4 cup (50 g) granulated sugar for meringue
  • Pinch of cream of tartar (optional)

Instructions

  1. Prepare the Toasted Meringue: In a clean, grease-free mixing bowl, add the 2 egg whites and a pinch of cream of tartar if using. Using an electric mixer, beat on medium speed until soft peaks form.
  2. Gradually add the 1/4 cup granulated sugar, a tablespoon at a time, while continuing to beat. Increase the speed to high and whip until stiff, glossy peaks appear (about 5-7 minutes).
  3. Cover the whipped meringue with a clean towel to keep from drying out while preparing the milkshake.
  4. Make the Milkshake Base: In a blender, combine vanilla ice cream, whole milk, fresh lemon juice, lemon zest, 2 tablespoons granulated sugar, and vanilla extract.
  5. Blend for 30-45 seconds until creamy and sugar dissolves completely. Adjust thickness by adding more milk or ice cream as needed.
  6. Pour the milkshake into tall glasses, leaving about an inch from the rim for the meringue topping.
  7. Top each glass with the toasted meringue using a spoon or piping bag.
  8. Toast the meringue with a kitchen torch until golden brown and caramelized (20-30 seconds). Alternatively, broil for 1-2 minutes watching carefully to avoid burning.
  9. Serve immediately before the meringue softens.

Notes

Use pasteurized egg whites if concerned about raw eggs. If no kitchen torch is available, use the broiler carefully. For dairy-free, substitute ice cream and milk with coconut-based alternatives and use aquafaba for vegan meringue. Fresh lemon juice is preferred but bottled can be used with sugar adjustment.
