  • ยฝ cup (130 g) sweetened condensed milk (or evaporated milk with a touch of sugar for lighter version)
  • 1 teaspoon vanilla extract
  • Ice cubes (preferably clear ice)
  • Optional garnishes: fresh mint leaves, passion fruit seeds, toasted coconut flakes

Instructions

  1. Make the Passion Fruit Syrup: In a small saucepan, combine 1 cup (240 ml) passion fruit pulp with ยฝ cup (100 g) granulated sugar. Heat over medium, stirring occasionally until sugar dissolves and mixture thickens slightly (3-5 minutes). Remove from heat and cool to room temperature.
  2. Prepare the Coconut Cream Layer: In a mixing bowl, whisk together 1 cup (240 ml) full-fat coconut milk, ยฝ cup (130 g) sweetened condensed milk, and 1 teaspoon vanilla extract until smooth and creamy. Chill while preparing glasses.
  3. Fill the Glass with Ice: Add ice cubes to serving glasses, filling about halfway.
  4. Layer the Passion Fruit Syrup: Pour about ยผ cup (60 ml) of cooled passion fruit syrup slowly over the ice to avoid mixing.
  5. Add the Coconut Cream: Using the back of a spoon, gently pour the chilled coconut cream mixture over the passion fruit layer to create a layered effect.
  6. Garnish and Serve: Top with passion fruit seeds, a sprig of mint, or toasted coconut flakes. Serve immediately with a straw or spoon.

Notes

Chill glasses and ingredients to keep layers distinct. Pour coconut cream slowly over the back of a spoon to maintain layering. Adjust sugar in syrup to taste depending on passion fruit tartness. For vegan version, substitute sweetened condensed milk with coconut condensed milk or coconut cream and maple syrup. Syrup can be made up to 3 days ahead and refrigerated.
