A smooth and velvety tropical cocktail combining coconut cream and fresh pineapple juice, perfect for a quick and easy mini-vacation in a glass.

  • 2 ounces (60 ml) white rum
  • 1 ounce (30 ml) full-fat coconut cream
  • 2 ounces (60 ml) pineapple juice, preferably fresh-pressed or chilled
  • 1/2 ounce (15 ml) triple sec or orange liqueur
  • 1/2 ounce (15 ml) fresh lime juice
  • 1/2 ounce (15 ml) simple syrup (adjust to taste)
  • Ice cubes (enough to fill the shaker)
  • Pineapple wedge and maraschino cherry for garnish (optional)

Instructions

  1. Chill your martini or coupe glass in the freezer for about 10 minutes.
  2. Measure and pour 2 ounces white rum, 1 ounce full-fat coconut cream, 2 ounces pineapple juice, 1/2 ounce triple sec, 1/2 ounce fresh lime juice, and 1/2 ounce simple syrup into a cocktail shaker.
  3. Add ice cubes to nearly fill the shaker (about 4-6 medium cubes).
  4. Secure the lid and shake vigorously for 15-20 seconds until the outside of the shaker feels cold and frosty.
  5. Remove the glass from the freezer and strain the cocktail into it using a fine mesh strainer or the shaker’s built-in strainer.
  6. Garnish with a pineapple wedge and a maraschino cherry on the rim.

Notes

Use fresh pineapple and lime juice for best flavor. Full-fat coconut cream is key for creaminess. Adjust simple syrup to taste or omit for less sweetness. For a lighter version, substitute coconut milk but expect less creaminess. For a non-alcoholic version, replace rum and triple sec with pineapple soda and coconut extract. Chill glass before serving. Shake vigorously to emulsify ingredients. If too thick, add a splash of cold water or pineapple juice. Optional: add egg white for extra frothiness.
