  • 1/2 cup canned full-fat coconut milk (120ml)
  • 1/4 cup coconut cream (60ml)
  • 12 tablespoons honey or maple syrup, to taste
  • 1/2 teaspoon vanilla extract
  • 1/2 cup ice cubes (about 45 cubes)
  • Pinch of salt
  • Optional garnish: fresh strawberry slices and a sprig of mint

Instructions

  1. Prep your ingredients: Open the can of coconut milk and stir it well if it’s separated. Measure out your frozen strawberries.
  2. Add liquids first: Pour the coconut milk and coconut cream into the blender.
  3. Add the strawberries and sweetener: Drop in the frozen strawberries, then drizzle in your honey or maple syrup. Add the vanilla extract and a pinch of salt. If using ice, add it now.
  4. Blend on low, then high: Start the blender on low speed to break up the larger strawberry pieces. After about 10 seconds, increase to high speed and blend for 30-45 seconds until smooth and uniform.
  5. Taste and adjust: Taste your drink and adjust sweetness, coconut flavor, or consistency as needed. Blend briefly to incorporate any adjustments.
  6. Pour and serve immediately: Divide the drink between two tall glasses. Garnish with fresh strawberry slices and a sprig of mint if desired.

Notes
