Instructions

  1. Prepare the cold brew coffee concentrate by steeping 1 cup (85 g) coarsely ground coffee in 4 cups (960 ml) cold water for 12 to 24 hours in the fridge, then strain.
  2. In a large mixing bowl, whisk or blend ยฝ cup pumpkin puree with 1 teaspoon ground cinnamon, ยฝ teaspoon ground nutmeg, ยผ teaspoon ground ginger, and a pinch of salt until smooth and fragrant.
  3. Stir in 2 tablespoons maple syrup and 1 teaspoon vanilla extract; taste and adjust sweetness.
  4. Pour 2 cups cold brew concentrate into the pumpkin mixture and whisk or blend until fully combined and smooth.
  5. Slowly add ยฝ cup heavy cream while whisking to create a creamy, velvety texture.
  6. Adjust sweetness and spices as needed; add a splash of cold water or milk if too thick.
