Ingredients

Scale
  • 1 cup (240 ml) strong brewed espresso or coffee, chilled
  • 2 tablespoons pumpkin puree (not pumpkin pie filling)
  • 1 cup (240 ml) milk (dairy or plant-based, oat milk recommended for creaminess)
  • 2 tablespoons maple syrup or honey (adjust to taste)
  • 1 teaspoon pumpkin pie spice (blend of cinnamon, nutmeg, cloves, and ginger)
  • ยฝ teaspoon vanilla extract
  • ยผ cup (60 ml) heavy cream, chilled (or coconut cream for dairy-free)
  • 1 tablespoon sugar (optional, for foam sweetness)
  • Ground cinnamon and cocoa powder for decorating the foam spider web pattern
  • Ice cubes as needed

Instructions

  1. Chill your serving glass in the fridge or freezer for about 5 minutes to keep the drink cold longer.
  2. Brew 1 cup (240 ml) of strong espresso or coffee and let it cool completely. You can brew ahead and keep it chilled.
  3. In a small bowl, whisk together 2 tablespoons pumpkin puree, 2 tablespoons maple syrup, 1 teaspoon pumpkin pie spice, and ยฝ teaspoon vanilla extract until smooth.
  4. Pour 1 cup (240 ml) of milk into the pumpkin mixture and stir well to combine. Taste and add more maple syrup if desired.
  5. Fill the chilled glass halfway with ice cubes. Pour the pumpkin milk mixture over the ice, then slowly add the chilled espresso or coffee on top to create layers.
  6. In a cold mixing bowl, whip ยผ cup (60 ml) heavy cream with 1 tablespoon sugar until soft peaks form, about 2-3 minutes with an electric mixer.
  7. Spoon or gently pour the whipped cream foam over the iced latte, covering it evenly.
  8. Lightly dust the foamโ€™s surface with ground cinnamon or cocoa powder. Using a toothpick or skewer, draw a spiral from the center outward, then drag lines from the center to the edges to create a spider web pattern.
  9. Serve immediately to enjoy the fresh foam topping and crisp ice.

Notes

Use pure pumpkin puree, not pumpkin pie filling, for best flavor. Keep heavy cream chilled before whipping for stable foam. Pour espresso slowly over pumpkin milk to maintain layers. Serve immediately to keep foam fresh. For vegan version, substitute heavy cream with coconut cream and milk with plant-based milk like oat or almond.
