  • 23 tablespoons sugar or sweetener (brown sugar adds depth)
  • ยฝ cup (about 100 grams) tapioca pearls (fresh or quick-cook pearls; popping boba optional)
  • Ice cubes as needed

Instructions

  1. Bring 4 cups (950 ml) of water to a rolling boil in a medium saucepan. Add ยฝ cup (100 g) tapioca pearls, stirring gently to prevent sticking. Boil for 5-7 minutes or according to package instructions, stirring occasionally. Once pearls float, reduce heat and simmer for 5 more minutes. Remove from heat, cover, and let sit for 10 minutes.
  2. Drain cooked pearls and rinse under cold water to stop cooking. Transfer to a bowl and mix with 1 tablespoon brown sugar or honey to prevent sticking and add sweetness. Set aside.
  3. In the same saucepan, bring 1 cup (240 ml) water to a boil. Add 2 teaspoons loose leaf black tea or 2 tea bags. Steep for 3-4 minutes, then strain or remove tea bags. Allow tea to cool slightly.
  4. In a mixing bowl, combine 3 tablespoons taro powder with 1 cup (240 ml) milk or coconut milk. Whisk vigorously to dissolve powder completely, ensuring no lumps. Add 2-3 tablespoons sugar or sweetener to taste and stir until dissolved.
  5. Pour brewed black tea into the taro milk mixture and stir until well combined. Adjust sweetness if needed.
  6. In a tall glass, add a generous scoop of sweetened tapioca pearls, fill halfway with ice cubes, then pour taro milk tea over the top. Stir gently and enjoy immediately.

Notes

Do not overcook tapioca pearls; they should be soft but chewy. Whisk taro powder thoroughly to avoid lumps. Steep tea for 3-4 minutes to avoid bitterness. Adjust sweetness gradually. Chill glass before serving to keep drink cold longer. Reheat pearls briefly in hot water if they harden when cold. Best enjoyed fresh; avoid reheating taro milk tea to prevent separation.
