Instructions

  1. Pour 2 ยฝ cups (600 ml) of water into a medium saucepan and bring to a rolling boil over high heat (about 5 minutes).
  2. Remove from heat and stir in 3 tablespoons of Thai tea mix, star anise, and cardamom pods if using. Let steep for 5 minutes.
  3. Strain the tea using a fine mesh strainer or cheesecloth into a heatproof bowl or pitcher, pressing gently on the tea leaves to extract flavor without bitterness.
