Instructions

  1. Crush about 2 sheets of graham crackers into fine crumbs and spread on a small plate.
  2. Brush about 1 tablespoon of honey or maple syrup around the rim of your mug.
  3. Press the honeyed rim into the graham cracker crumbs to coat evenly. Set mug aside.
  4. Brew 1 cup (240 ml) of strong coffee or espresso and pour into the mug carefully.
  5. In a small saucepan, combine 1 cup (240 ml) milk, 2 tablespoons cocoa powder, 2 tablespoons sugar, and 1 teaspoon vanilla extract. Warm over medium heat, whisking constantly until smooth and just simmering (3-4 minutes). Avoid boiling.
  6. Slowly pour the hot chocolate mixture into the coffee in the mug, stirring gently to combine.
  7. Top the drink generously with marshmallows.
  8. Toast the marshmallows using a kitchen torch until golden brown and caramelized (20-30 seconds). Alternatively, broil in the oven for 1-2 minutes, watching closely to avoid burning.
  9. Optionally, add a dollop of whipped cream or a sprinkle of cocoa powder on top.
  10. Serve immediately and enjoy.
