A quick and easy recipe to create a creamy, velvety vanilla bean cold foam that elevates your homemade cold brew coffee with natural sweetness and smooth texture.

  • 1 cup (240 ml) cold whole milk (or 2% milk or oat milk for dairy-free option)
  • 1 vanilla bean pod, seeds scraped (or 1 tsp vanilla bean paste)
  • 12 tsp simple syrup (or honey, maple syrup, or agave)
  • 2 tbsp heavy cream (optional, for thicker foam)
  • 1 tbsp ice-cold water (a splash)

Instructions

  1. Using a sharp knife, split the vanilla bean pod lengthwise and scrape out the seeds with the back of the knife. Set seeds aside.
  2. In a blender or mixing bowl, add 1 cup (240 ml) of cold whole milk, the scraped vanilla seeds, 1 to 2 teaspoons of simple syrup (adjust to taste), and a splash of cold water (about 1 tablespoon). If you want creamier foam, add 2 tablespoons of heavy cream.
  3. Blend on high speed for about 30-45 seconds until the mixture doubles in volume and forms soft peaks. If using a handheld frother, froth for about 1-2 minutes until airy and thick.
  4. Check the texture. The foam should be light and creamy, with a velvety texture. If it feels too thin, blend or froth a few seconds longer, but donโ€™t overdo it or the milk might separate.
  5. Pour your chilled cold brew coffee into a tall glass, leaving some space on top. Spoon the creamy vanilla bean cold foam gently over the coffee surface, allowing it to float like a cloud.
  6. Serve immediately. Enjoy with a straw or sip straight through the foam. The foam will hold its texture for about 20 minutes before slowly settling.

Notes

Use cold milk and cold brew for best foam stability. Avoid over-blending to prevent milk separation. Heavy cream is optional for thicker foam. Fresh vanilla bean seeds provide superior flavor over extract. Foam holds texture for about 20 minutes. Store leftover foam in airtight container in fridge up to 24 hours and re-whisk before use.
