  • 2 ounces (60 ml) freshly brewed espresso
  • 1/4 cup (60 ml) cold whole milk (or oat/almond milk for dairy-free)
  • 1/4 cup (60 ml) heavy cream (or full-fat coconut milk for dairy-free)
  • 1 to 1.5 tablespoons simple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of ground cinnamon (optional)
  • Ice cubes

Instructions

  1. Brew about 2 ounces (60 ml) of strong espresso and let it cool slightly.
  2. Prepare the cold foam by combining 1/4 cup (60 ml) cold milk, 1/4 cup (60 ml) heavy cream, 1/2 teaspoon vanilla extract, and a pinch of cinnamon in a small bowl or frothing jug. Froth with a milk frother or handheld blender until thick and velvety, about 30 seconds. Chill in the fridge.
  3. In a cocktail shaker, add the cooled espresso, simple syrup (start with 1 tablespoon), and 6-8 ice cubes. Shake vigorously for 15-20 seconds until well chilled and slightly frothy.
  4. Strain the espresso mixture into a chilled martini or coupe glass, leaving room for the foam.
  5. Gently spoon or pour the cold foam over the espresso base to float on top.
  6. Optionally dust with cinnamon or cocoa powder for garnish and serve immediately.

Notes

Use fresh espresso for best flavor and let it cool before shaking to avoid melting ice. Chill cream and milk before frothing for better foam. Adjust simple syrup to taste. For dairy-free, substitute heavy cream with coconut cream and milk with almond or oat milk. Foam is best served fresh and does not store well.
