  • 1 tablespoon fresh lime juice
  • Pinch of salt

Instructions

  1. Measure out 2 cups (300 g) frozen pineapple chunks, 1 cup (240 ml) canned coconut milk, 1 cup (120 g) ice cubes, 1 tbsp fresh lime juice, 1 tsp vanilla extract, 1โ€“2 tbsp honey or agave syrup, and a pinch of salt.
  2. Place pineapple, coconut milk, ice, honey, vanilla, lime juice, and salt in the blender jar.
  3. Secure the lid and blend on high for about 1 minute, or until smooth and creamy. Pause to scrape down the sides if needed. The mixture should look thick but pourable.
  4. Taste and adjust sweetness or lime juice as desired, blending briefly again if you add anything.
