A refreshing twist on the classic Dark and Stormy cocktail featuring dark rum, spicy ginger beer, fresh lime juice, and gently muddled mint for a vibrant and lively drink.

  • 2 ounces dark rum (preferably molasses-forward like Goslingโ€™s Black Seal)
  • 4 to 6 ounces ginger beer (spicy and effervescent, e.g., Fever-Tree or Bundaberg)
  • Juice of 1 fresh lime plus wedges for garnish
  • 6 to 8 fresh mint leaves, gently muddled
  • Ice (large cubes or crushed)
  • Optional: 1/4 ounce simple syrup (7 ml) for sweetness
  • Optional: A couple of dashes of Angostura bitters

Instructions

  1. Place 6 to 8 fresh mint leaves at the bottom of a highball glass and gently muddle to release oils without shredding the leaves (about 10 seconds).
  2. Squeeze the juice of one fresh lime directly into the glass over the muddled mint. Add 1/4 ounce simple syrup if a sweeter drink is desired.
  3. Fill the glass about 3/4 full with large ice cubes.
  4. Pour 2 ounces of dark rum over the ice.
  5. Slowly top with 4 to 6 ounces of spicy ginger beer.
  6. Gently stir to combine flavors without bruising the mint further.
  7. Garnish with a lime wedge and a fresh mint sprig.

Notes

Be gentle when muddling mint to avoid bitterness. Use fresh lime juice for best flavor. Large ice cubes melt slower and keep the drink balanced. Adding Angostura bitters is optional for added depth. For a low sugar version, use diet ginger beer and skip simple syrup.
