A quick and easy refreshing cocktail combining sweet cherries, almond-flavored amaretto, fresh lemon juice, and sparkling soda water for a lively fizz. Perfect for parties and casual gatherings.

  • 1.5 oz (45 ml) Amaretto Liqueur (e.g., Disaronno)
  • 3–4 fresh or maraschino cherries
  • 0.5 oz (15 ml) fresh lemon juice (about half a lemon)
  • 0.5 oz (15 ml) simple syrup (homemade or store-bought, adjust to taste)
  • 3–4 oz (90–120 ml) soda water or sparkling water, chilled
  • Ice cubes (clear, large cubes preferable)
  • Optional: Fresh mint leaves for garnish
  • Optional: 0.25 oz (7 ml) cherry syrup for extra cherry flavor

Instructions

  1. Fill a highball glass with ice cubes about halfway or a little more to chill the glass.
  2. In a mixing glass, place 3-4 cherries and gently muddle them with a muddler or the back of a spoon to release their juices without turning them into mush.
  3. Add 1.5 oz amaretto, 0.5 oz fresh lemon juice, and 0.5 oz simple syrup to the mixing glass. Optionally add 0.25 oz cherry syrup for a stronger cherry note. Stir gently to combine.
  4. If using a shaker, add ice and shake lightly for about 10 seconds. If no shaker, stir vigorously for 20-30 seconds to chill and blend flavors.
  5. Strain the mixture into the prepared highball glass over the ice, leaving behind cherry bits for a smooth sip.
  6. Slowly top with 3-4 oz chilled soda or sparkling water to keep the bubbles lively.
  7. Garnish with a fresh cherry or two on a cocktail pick and a sprig of mint. Serve immediately.

Notes

Do not over-muddle cherries to avoid bitterness and cloudiness. Use fresh lemon juice for best flavor. Add soda water just before serving to maintain fizz. Large ice cubes melt slower and prevent dilution. Strain for a smoother drink or leave cherry bits for rustic charm. Adjust sweetness with simple syrup or lemon juice to taste.
