A quick and refreshing summer drink combining rich cold brew coffee, tart dark sweet cherries, creamy vanilla ice cream, and fizzy soda water for a delightful float experience.

  • 1 cup (240 ml) cold brew coffee, dark roast
  • 1 cup (150 grams) dark sweet cherries, pitted (fresh or frozen)
  • 2 tablespoons (25 grams) sugar (white granulated, raw, or coconut sugar)
  • 1/3 cup (80 ml) water
  • 2 scoops (about 1 cup / 240 ml) vanilla ice cream (dairy-free coconut ice cream optional)
  • 1/2 cup (120 ml) soda water or sparkling water
  • Fresh cherry garnish (optional)

Instructions

  1. In a small saucepan, combine the pitted dark sweet cherries, sugar, and water. Bring to a gentle simmer over medium heat, stirring occasionally. Cook for about 7-8 minutes until the cherries soften and the sugar dissolves.
  2. Remove from heat and let cool slightly. Use a blender or immersion blender to puree the mixture until smooth. For some cherry chunks, pulse a couple of times instead of fully blending.
  3. Optional: Strain the syrup through a fine mesh sieve to remove skin and seeds for a smoother texture.
  4. Pour 1 cup (240 ml) of cold brew coffee into a large glass. Add 2-3 tablespoons of the cherry syrup and stir gently.
  5. Slowly pour 1/2 cup (120 ml) of soda water on top to add fizz without losing the cherry-coffee swirl.
  6. Add two scoops of vanilla ice cream on top. Watch as it melts into the coffee, creating a creamy float effect.
  7. Garnish with a fresh cherry or two on top. Serve immediately with a straw or long spoon.

Notes

Do not over-simmer the cherry syrup to keep it pourable and fresh-tasting. Add soda water last and pour slowly to maintain fizz. Serve immediately for best texture and flavor. Cherry syrup can be made ahead and refrigerated up to 5 days. For a dairy-free version, use coconut or almond milk-based ice cream. Optionally add a splash of milk or cream to soften cold brew bitterness before soda water. Experiment with spices like cinnamon or nutmeg in the syrup for a warming twist.
