A sweet, tangy, and sparkling pink lemonade that’s perfect for summer gatherings or a refreshing pick-me-up.

Ingredients

Scale
  • 4โ€“5 medium lemons, freshly squeezed
  • 4 cups cold, filtered water
  • 1/2 cup granulated sugar or 1/3 cup honey
  • 1 cup fresh strawberries, hulled and sliced
  • Ice cubes
  • Club soda or sparkling water (optional)
  • Lemon slices for garnish
  • Fresh mint leaves for garnish

Instructions

  1. Roll each lemon on the counter to soften them, then cut in half. Juice the lemons using a citrus juicer or by hand to yield approximately 1 cup (240 ml) of lemon juice.
  2. Blend the hulled strawberries in a blender until smooth. Strain the puree through a fine mesh strainer to remove seeds and pulp. Set aside.
  3. In a large pitcher, mix the lemon juice, strawberry puree, and sugar (or honey). Stir until the sugar dissolves completely. Taste test the mixture and adjust sweetness or tartness as needed.
  4. Gradually pour in 4 cups (960 ml) of cold water, stirring gently to combine. If you prefer a fizzy lemonade, substitute half of the water with club soda or sparkling water.
  5. Fill the pitcher with ice cubes to keep the lemonade chilled and refreshing.
  6. Slice a few lemons and add them to the pitcher along with fresh mint leaves. Pour the lemonade into glasses, garnish with additional lemon slices and mint, and enjoy!
