  • 1/2 cup (120 ml) milk (any kind)
  • 1 to 2 teaspoons pumpkin pie spice mix

  1. Brew your coffee: Start by brewing 1 cup (240 ml) of strong coffee. If using a drip machine, use double the amount of coffee grounds you normally would. If using instant coffee, use 2 teaspoons instead of the usual 1.
  2. Heat the milk: Pour 1/2 cup (120 ml) of milk into a small saucepan over medium heat. Warm it gently until it is steaming but not boiling. If using the microwave, heat in 30-second intervals, stirring between each, until steaming (about 60 to 90 seconds).
  3. Add the pumpkin pie spice: Stir 1 to 2 teaspoons of pumpkin pie spice mix into the warm milk. Start with 1 teaspoon if you are unsure, then taste and add more. Whisk until the spice is fully dissolved and the milk turns a warm, golden-brown color.
  4. Froth the milk: Use a handheld milk frother to create foam. Insert the frother into the warm spiced milk and turn it on. Move it in an up-and-down motion for about 20 to 30 seconds until the milk doubles in volume and becomes frothy. If you do not have a frother, whisk vigorously by hand or pour the milk into a jar with a tight lid and shake it for 30 seconds, then microwave for 30 seconds to stabilize the foam.
  5. Combine and serve: Pour the brewed coffee into your mug. Slowly pour the frothed spiced milk over the top, holding back the foam with a spoon if you want to layer it. Spoon the foam on top. Give it a gentle stir if you want the spice distributed throughout, or leave it layered for a prettier presentation.
  6. Optional garnish: Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top of the foam. If you are feeling fancy, add a cinnamon stick or a star anise for visual appeal.

Use double-strength coffee so the flavor isn’t lost. Do not boil the milk; heat until steaming. Milk froths best between 140ยฐF and 150ยฐF (60ยฐC to 65ยฐC). Adjust spice to taste.
