  • 1 cup (240 ml) milk or milk alternative (whole milk, oat milk, or almond milk)
  • 2 tablespoons pumpkin puree (pure pumpkin, not pumpkin pie filling)
  • 1 to 2 tablespoons brown sugar (adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • 1/4 teaspoon ground cinnamon
  • Whipped cream (optional, for topping)

Instructions

  1. Brew one cup (240 ml) of strong espresso or coffee. If no espresso machine, brew double-strength coffee using preferred method. Keep warm.
  2. In a small saucepan over medium-low heat, combine 1 cup (240 ml) milk, 2 tablespoons pumpkin puree, 1 to 2 tablespoons brown sugar, 1 teaspoon pumpkin pie spice, 1/4 teaspoon cinnamon, and 1/2 teaspoon vanilla extract.
  3. Whisk frequently to prevent scorching. Heat until warm and smooth but not boiling, about 3 to 5 minutes, until pumpkin spice aroma is noticeable.
  4. Remove from heat and froth the pumpkin-spiced milk with a handheld frother or whisk vigorously until foamy and creamy.
  5. Pour brewed coffee into a mug, then gently add the frothed pumpkin milk on top. Use a spoon to hold back foam, then spoon foam over the latte.
  6. Optionally, top with whipped cream and a sprinkle of cinnamon or pumpkin pie spice.

Notes

Use pure pumpkin puree, not pumpkin pie filling. Heat milk gently to avoid scorching. Fresh spices improve flavor. Froth milk for best texture. Adjust sweetness to taste. Store pumpkin milk mixture separately for up to 2 days in fridge. Reheat gently before use.
