  • 1 cup (240 ml) boiling water
  • 1 cup (240 ml) 100% fruit juice (cranberry, orange, pineapple, or grape)
  • 1 cup (240 ml) alcohol (vodka, rum, tequila, or flavored liqueurs)
  • 1/4 cup (50 grams) sugar (optional)
  • Fresh fruit pieces (optional, small chunks of strawberries, blueberries, or kiwi)
  • Non-stick spray or oil (for greasing molds or cups)

Instructions

  1. In a medium bowl, sprinkle 2 tablespoons (about 20 grams) of gelatin powder evenly over 1 cup (240 ml) of cold fruit juice. Let it sit for 1-2 minutes to bloom.
  2. Pour 1 cup (240 ml) boiling water over the bloomed gelatin and stir briskly until completely dissolved (about 1-2 minutes).
  3. If desired, stir in 1/4 cup (50 grams) sugar until dissolved. Taste and adjust sweetness as needed.
  4. Let the gelatin mixture cool for about 5 minutes, then stir in 1 cup (240 ml) of your chosen alcohol until fully combined.
  5. If using, place small fruit pieces into your molds or cups.
  6. Carefully fill silicone molds or small cups with the jello mixture, leaving a small gap at the top.
  7. Refrigerate on a flat surface for at least 4 hours or until fully set. Overnight chilling is recommended for best results.
  8. To serve, gently pop the shots out of silicone molds or serve plastic cups as-is. Running warm water briefly on the outside can help loosen shots from plastic cups.

Notes

Bloom gelatin properly to avoid clumps. Adjust alcohol quantity to ensure firm setting; too much alcohol can prevent gelatin from setting. Overnight chilling improves texture. For vegan version, substitute gelatin with agar-agar and follow package instructions. Use non-alcoholic spirits or extra juice for virgin shots. Store leftovers in airtight container in refrigerator up to 5 days. Avoid freezing unless making popsicles.
