A quick and easy refreshing brunch drink that combines fresh lemon juice with a delicate floral lavender infusion, perfect for impressing guests with minimal effort.

  • 6 large fresh lemons
  • 1 tablespoon dried culinary lavender buds
  • 1 cup (200g) granulated sugar
  • 5 cups (1.2 liters) water (divided into hot and cold)
  • Ice cubes
  • Lemon slices and lavender sprigs (optional, for garnish)

Instructions

  1. Bring 2 cups (475 ml) of water to a gentle boil. Remove from heat and stir in 1 tablespoon of dried lavender buds. Cover and let steep for 10 minutes.
  2. Strain the lavender infusion through a fine mesh strainer or cheesecloth into a large pitcher, pressing lightly on the buds to extract flavor. Discard the buds.
  3. While the lavender water is still warm, stir in 1 cup (200g) granulated sugar until completely dissolved.
  4. Roll the lemons on the counter to soften, cut in half, and juice them to yield about 1 cup (240 ml) fresh lemon juice. Strain to remove seeds and pulp.
  5. Add the lemon juice to the lavender syrup in the pitcher. Pour in 3 cups (710 ml) of cold water and stir well. Adjust sweetness or tartness to taste.
  6. Add ice cubes to the pitcher or individual glasses. Garnish with lemon slices and lavender sprigs if desired. Serve immediately.

Notes

Do not over-steep lavender to avoid bitterness; 10 minutes is ideal. Use fresh lemons for best flavor. Adjust sweetness gradually while warm. Strain carefully for smooth texture. Add ice just before serving to avoid dilution. Store lavender syrup and lemon juice separately if preparing ahead.
