  • 0.5 ounce fresh lemon juice (about 15 ml)
  • 0.5 ounce simple syrup (about 15 ml)
  • 0.5 ounce Chambord raspberry liqueur (about 15 ml)
  • 34 fresh raspberries
  • 3 ounces brut sparkling wine or champagne (about 90 ml)
  • Ice cubes

Instructions

  1. Place 3-4 fresh raspberries into the bottom of a cocktail shaker and gently muddle to release juice without pulverizing, about 30 seconds.
  2. Add 1 oz gin, 0.5 oz fresh lemon juice, 0.5 oz simple syrup, and 0.5 oz Chambord to the shaker.
  3. Fill the shaker halfway with ice cubes, close tightly, and shake vigorously for about 15 seconds until the shaker is cold and frosty.
  4. Strain the mixture into a chilled champagne flute or coupe glass. For a smoother cocktail, strain through a fine mesh to remove raspberry seeds.
  5. Slowly pour 3 oz chilled brut sparkling wine or champagne over the cocktail to preserve bubbles.
  6. Garnish with a fresh raspberry or skewer on a cocktail pick and serve immediately.

Notes

Use freshly squeezed lemon juice for best flavor. Do not over-muddle raspberries to avoid bitterness. Chill all ingredients and glassware to keep bubbles longer. Pour sparkling wine slowly down the side of the glass. Adjust sweetness with simple syrup or lemon juice to taste. Can substitute gin with elderflower cordial or non-alcoholic gin alternative for lower alcohol. Prepare the raspberry-gin-lemon mixture up to 24 hours ahead and refrigerate; add ice and sparkling wine just before serving.
